Peanut butter and chocolate..is there anything better? I love anything peanut butter, add chocolate and I’m sold.
This recipe is another adaptation from Cooking Light Magazine. I found the recipe in their October issue but changed it up quite a bit.
In a large heavy bottom pot add 3 tbsp of oil and 1/2 cup of popcorn kernels.
In a medium pot add 2/3c of light corn syrup, 2/3c light brown sugar, 2 1/2 tbsp butter, and 1/2 tsp salt. Stir occasionally, bring to a boil then remove from heat.
Add 1/2 cup of peanut butter and 1tsp of vanilla extract
stir until you get a smooth consistency
Drizzle over popcorn, toss, and spread mixture onto a baking sheet lined with parchment paper (coat your paper with cooking spay)
Bake at 250 for one hour, stirring every 15 minutes. Let cool. Technically you could be done here but why not add some excitement to the mix?
Peanut Butter & Milk Chocolate chips found at Target? $1 bag of PB M&M’s? Ummm yes please!
Drizzle melted chips and add pb m&ms
Don’t you just love peanut butter and chocolate together? This could easily be packaged up as a holiday gift for coworkers, friends, neighbors, etc. Speaking of gifts, I have several holiday gifts that I plan to post in the next few weeks. So stay tuned!
