Guacamole Recipe

Hi friends! Today I’m going to share with you my favorite guacamole recipe using Avocados from Mexico. I’ve been making this guacamole for as long as I can remember. We like pairing it with quesadilla’s, tacos, and even plain tortilla chips. This guacamole will definitely be included in our super bowl party food.
Ingredients:
1 tomato
1/2 of an onion
2 avocados from Mexico
1 lime
1 tsp of jalapeno
Salt & Pepper
1 garlic clove (minced)
(Optional) cilantro
1. Mash avocados and lime juice to desired thickness 2. Add diced tomato, onion, jalapeno, and garlic 3. Add salt and pepper to taste.
That’s it! Then enjoy with your favorite Mexican dish or chips.

Chicken Parmesan Recipe

So I have a confession to make..
Up until two years ago I didn’t know how to cook. I mean I could cook but everything I made was nearly burnt to pieces. I didn’t know anything about seasoning, marinating, temperature, nothing what so ever. I had this fear of giving my family food poisoning so I cooked everything dry. Like the meat would be so tough, hubby used to kindly put it to side of his plate. I can laugh about it now but at the time it wasn’t funny.
Want to know the first dish I made without over cooking? Chicken Parmesan. And guess what? We all loved it, even the kids! It was the first time my son called me a good cook. I was so excited that I made this for dinner about once a week for the next month. The good thing is we all still love it.
So a few days ago when I was out of dinner ideas I knew this was my go to meal. I quickly packed the kids up and headed to my local SaveMart. You can check out our shopping trip here on google +. Do you have a SaveMart near you? With 3 SaveMart stores in my city, I’ve been shopping there since I was a child. Lately I’ve been seeing signs for their fuel rewards program and decided to ask someone about it. Turns out it’s a free card they swipe every time you make a purchase. For every $50 (on qualified) purchases you earn 5 cents per gallon at participating gas stations. The best part is you don’t have to spend $50 each trip, the points just accumulate on your card. But that’s not all, you can also earn Fuel Rewards by shopping online using any of the 700 Fuel Rewards Network merchants. Pretty awesome right?
Here’s the recipe for Chicken Parmesan.
Ingredients:
Boneless chicken breast
3/4 c bread crumbs
1 tsp Italian seasoning
1/4 cup Parmesan cheese
1/2 tsp garlic powder
Mozzarella cheese
Marinara sauce
1-2 tbsp oil
Salt and pepper
Cut chicken breast in half. Combine bread crumbs, seasoning, Parmesan cheese, garlic powder, salt and pepper. Heat oil in a skillet. Dip chicken into egg then into bread mixture. Cook for 1-2 minutes on each side then transfer to an oven safe pan. Bake for 15-20 minutes then pour marinara sauce on top. Let the sauce warm up then top with mozzarella cheese and bake until cheese is melted.
We like serving it with spinach and whole wheat bread. But another favorite is broccoli and whole wheat pasta.
