Toffee caramel apple crumble bars – an oatmeal crumble layer, caramel apple pie filling, topped with a toffee crumble.
 Lately I’ve shared several of my favorite pumpkin treats like pumpkin bread, cupcakes, and of course muddy buddies. To be honest though, I think I like apple desserts more in the fall than pumpkin. Don’t get me wrong, I LOVE pumpkin, but apples? Apples will always be my favorite in the fall. Growing up we didn’t eat a lot of pumpkin desserts, besides pumpkin pie. We did however always have apple treats around. My mother always had apple pie in the house from October through December. It became a staple in the fall. Needless to say I’ve always been a fan of anything baked with apples and cinnamon. Confession time…I used to like those little two for a dollar apple pies from McDonalds. I haven’t had one in over ten years so I can’t remember what they’re like but I know I grew up eating them along with 29 cent hamburgers. Haha who remembers that? Wait how did this conversation go from homemade apple pies to McDonalds?
These apple crumble bars are semi-homemade with Duncan Hines caramel apple pie filling and Heath toffee Bits. You could definitely make your own apple pie filling and toffee to crumble on top but this recipe is quick and easy the semi-homemade way. The bottom is a thick oatmeal cookie-like layer, the center is apple pie filling, and then they’re topped with a toffee-oatmeal crumble. Toffee bits pair wonderfully with baked apples, they’re sweet and balance out the tartness of the apples and adds texture.
Apple Crumble Bars
Ingredients
- 3 cups quick-cooking oats not instant
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 3/4 cup unsalted butter melted
- 1 21 ounce can caramel apple pie filling
- 1/2 cup toffee bits
Instructions
- Preheat oven to 350 degree and line a 13x9 inch pan with parchment paper.
- In a large bowl combine oats, flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- Add melted butter to oat mixture, mix until well combined.
- Set aside one cup of oat mixture and press remaining into prepared pan.
- Bake for 10-12 minutes.
- In a small bowl combine reserved 1 cup oatmeal mixture with 1/2 cup toffee bits.
- Spread apple pie filling over baked oat layer. Sprinkle crumb mixture on top.
- Bake for 30-35 minutes. Let cool completely on wire rack.
- Remove from pan by lifting parchment paper then cut into squares.
