Double chocolate chunk peppermint cookies.
The peppermint craze has officially begun in our home. I picked up a pack of candy canes last week and it started a string of peppermint baked goods. I forget how much I enjoy the combination of peppermint and chocolate until the holidays roll around. To satisfy my craving I made a batch of double chocolate peppermint cookies over the weekend. These cookies are filled with rich chocolate chocolate chunks, peppermint extract, and crushed candy cane pieces on top. You could use Andes peppermint baking pieces if you prefer a softer texture instead of the candy cane pieces.
Now that it’s almost the middle of November I’m warming up to the idea of pulling out the holiday decor and crafts. I know the next month will come and go faster than I ever want it to so I’m thinking I should get a head start on the decorating. On another note, is anyone else already thinking about black Friday shopping? I’m not hard core about it but I usually head out around 6am to see what deals I can find. I’m sure after the stress of shuffling through long lines and hundreds of other customers I’ll have some major chocolate cravings. I’ll be sure to have these peppermint cookies on hand just in case. And a cup of hot cocoa. It’s one of my favorite weekends of the year and I can’t wait to start the decorating, gift wrapping, Christmas caroling fun!
Double Chocolate Peppermint Cookies
Ingredients
- 1 cup unsalted butter softened
- 1 1/2 cups sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 2 cups all purpose flour
- 2/3 cup cocoa powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups chocolate chunks
- 1/2 cup candy cane pieces
Instructions
- Preheat oven to 350.
- Beat butter, sugar, eggs, vanilla and peppermint until light and fluffy.
- In a large bowl stir together flour, cocoa powder, baking soda, and salt.
- Slowly add flour mixture to butter mixture until well combined.
- Stir in chocolate chunks.
- Use cookie scoop to drop cookies onto ungreased baking sheet.
- Press candy cane pieces on top.
- Bake 8 to 10 minutes.
- Cool slightly then transfer to wire rack to cool completely.

I got on the peppermint craze a few weeks ago and haven’t jumped off yet! These look awesome!!!! We were just talking last night about holiday decorating earlier this year since my husband will be on a missions trip in December. I just love this time of year!

Black Friday? How about Black Thursday. I just can’t believe all these stores are opening at 6 p.m. and 8 p.m. What about a family day…how about letting those retail folks have a full day off???? I know there are restaurant staff having to work and I don’t think that’s right, either! OK…stepping off my soapbox about that.
Whatever happened to the going through alllllllll the ads on Thursday night and lining up what store to be at what time and making a mad dash from store to store?! lol I don’t do that anymore, but when my kids were little, I used to hit those stores early without them while they were home with dad. Christmas shopping was usually done by 10 AM! Now I shop online unless it’s a specific gift and then I try to buy at my local folks. They have unique things.

Just doubled the recipe and got 6.5 dozen cookies. Very good and easy to work with.
I just made these this weekend and they made just over 3 dozen.

Just made these for a cookie exchange at work. What a delicious cookie! And it presents so pretty too! Doubled the batch and got about 6 1\2 dozen cookies using a cookie scoop (average size). One suggestion, instead of sprinkling the crumbles of candy cane over the top, I put a couple of scoops of the cookie dough on the parchment paper and then picked them up and rolled the top of the cookie in the candy cane pieces in a bowl. (Much less of a mess on the pans). Also, be sure you keep larger pieces on each of the cookies, as the small crumbles of the candy cane will melt right into the cookie and won’t be seen when they come out of the oven. You need bigger pieces to make them prettier! Thanks for a great recipe! I will definitely make again! Five stars!!
The cookies were very good! I added white chocolate chips and more peppermint extract, and omitted the candy cane pieces because they stuck to my baking sheet after the first batch. I would make again :)

YUM! These are now my favorite Christmas cookie! I used peppermint Hershey kisses instead of the chocolate chunks and the candy cane pieces and I love them! Next time I will add more peppermint extract too. Thanks for the post!

These were delicious. I changed it a bit to fit with the ingredients we had. I didn’t add the peppermint flavoring to the dough, and I used white chocolate chips in place of the chocolate chunks. Worked perfectly. There was just enough chocolate to white chocolate to peppermint flavoring. Thanks for sharing your recipe! :)
