Easy 3-ingredient chocolate coffee popsicles.
This summer has been a quiet one for us. I can hardly believe summer break will be over in a month. I am NOT ready for the kids to go back. I like the lazy mornings and late nights. Granted I’ll probably need to adjust their sleeping schedule soon so we’re back on track come August. For the time being I’m loving staying up late playing games and watching movies. Sometimes I think I stay up way too late after the kids go to bed. I do this every summer, where my schedule gets completely thrown off and I sleep in a lot later than normal. To help curb off the sleepiness of our late nights I’ve been consuming coffee more than usual. I’ve also been on a cold coffee treats kick. I’m finding myself making coffee popsicles, ice cream floats, and lattes quite a few times a week. One of my favorites right now are these coffee popsicles. You can make them with as little as two ingredients!
These coffee popsicles are made with chilled brewed coffee, International Delight Hershey’s Chocolate Caramel creamer, and fudge topping. You could definitely leave out the fudge for lower calories or switch it with caramel sauce instead. The recipe is fairly simple, you just make your cup of coffee how you prefer and pour it into a popsicle mold. If you like a stronger coffee flavor adjust the creamer accordingly. Chocolate Coffee Popsicles
Ingredients
- 2 cups coffee
- 4 tablespoons International Delight Hershey's Chocolate Caramel Creamer
- 2 tablespoons fudge or caramel sauce
Instructions
- Brew coffee and chill in refrigerator for 20 minutes.
- Stir in creamer and fudge (or caramel) sauce.
- Pour into popsicle mold. Freeze for 4-6 hours.
