September..the month leaves start turning vibrant shades of red, yellow, orange and brown. The month where beautiful mums adorn front porches. The month it starts to cool down from the scorching summer heat. The month that brings boots back in season and comfy sweaters back in style. And most important of all, September brings pumpkin spice recipes back into our lives! Last week we bit farewell, unofficially, to summer and celebrated my favorite season with mini pumpkin cheesecakes. Now to be honest it’s still 100 degrees this week and there aren’t any real pumpkins in sight just yet but I’m already mentally committed to Fall being here. I’ve busted out my fall decor and even started on Halloween projects. In fact you’ll be seeing a Halloween project very soon! Now that the kids are settled in a good school routine I’m ready to get back to blogging regularly. I have so many Fall & Halloween projects scheduled this month that I can’t wait to start posting. How about we kickoff Fall with a pumpkin cheesecake recipe that’s perfect for Fall gatherings!
We are big fans of making our desserts miniature. These mini pumpkin cheesecakes were made with this Norpro Deluxe Mini Cheesecake Pan. I bought this pan from Amazon early this year and have been waiting to for the perfect opportunity to use it. I can not stress enough how much I love this pan! It makes the most perfect size cheesecake bites. The mini pumpkin cheesecakes are smaller than a cupcake and can possibly be eaten in 2-3 bites. They’re small and great for Thanksgiving, pumpkin carving parties, or football parties this fall.
We’ve used variation of this recipes for years. I adjusted it to make smaller portions based off of our other mini cheesecake recipes. Just a few tips: use a small cookie scoop to evenly distribute the pumpkin filling into the cheesecake pan. I also like to leave mine in the refrigerator overnight to ensure they’re completely firm before releasing from the pan.
