Easy caramel turtles and salted caramel turtles – great for holiday gifts!
The Will Farrell Elf countdowns going around Facebook are getting me excited for Christmas. I know, I know you’re probably thinking it’s too soon. In a blogger’s world we work ahead of time and are often ready to move to the next holiday before one even passes. As in the case with Halloween. You guys, I’m so ready for Christmas! I have so many fun things in the works that I can’t wait to share with you. My schedule is getting a little overwhelming, but oh how I’m looking forward to sharing everything. Are you ready for Christmas posts? What about holiday treats? Holiday baking is one of my favorite times of the year. I love creating gifts in the kitchen to give friends and family. My mother and I used to make 10+ treats every year and fill tins to give family we visited on Christmas eve. This year I plan to share some of our favorite recipes, starting with these easy turtles candy. A few years ago I shared a salted caramel turtles recipe that I absolutely love. This new recipe has a softer caramel. For this recipe I used half a 14oz bag of caramels (around 24 caramels) that have been heated with heavy cream. You’ll want to keep the heat low and stir constantly. In regards to the layering of the chocolate and caramel typically the chocolate is on top. You really can make these any way you’d like. With this turtle candy recipe I poured a 1/2 tablespoon of melted Ghirardelli chocolate onto a parchment paper lined baking sheet. I then layered the caramel and pecans on top. To finish the turtle pieces I drizzled melted chocolate. At this point you can sprinkle sea salt to make them salted caramel turtles.
Salted Caramel Turtles Candy
Ingredients
- 8 ounces semi-sweet or dark chocolate
- 24 unwrapped caramels
- 4 tablespoons heavy cream
- 1/2 cup chopped pecans
- sea salt optional
Instructions
- Melt chocolate over a double boiler on low heat.
- In a small saucepan melt caramels and heavy cream. Once melted work quickly to avoid having the caramel harden. You can add 1-2 tablespoons of heavy cream if needed to make a softer caramel.
- On a parchment paper lined baking sheet pour 1/2 tablespoon of chocolate. Add 1 teaspoon caramel on top along with the pecans. You can reverse the layers so that the chocolate is on top of the caramel and pecans. Place in refrigerator for 10 minutes to set.
- Drizzle remaining chocolate over the turtles. Sprinkle a few flakes of sea salt on top if desired.
