Over the summer we decided to switch one of our meals for a vegetarian option. During the summer months, with an abundance of fruit and veggies, it was easy to create meatless meals for the entire family. Recently we took the Meatless Monday Night challenge to help our family adapt to a better plant-based diet with dinner and dessert recipes. It hasn’t always been easy for me to figure a meal plan, which made me realize how dependent we’ve become to having meat in our recipes. However, as the seasons change and new vegetables come in season it’s been fun challenging myself to try new recipes. Today I’m sharing a pumpkin smoothie recipe that I adapted from our protein pumpkin shake.
My husband likes to send me funny memes about how crazy people get over pumpkin spice and it made me realized that we haven’t made any pumpkin treats in a while. He jokes that I used to be one of those pumpkin spice fanatics. Which may or may not have some truth to it. But can you blame me? This pumpkin spice smoothie we made with Silk Vanilla Almondmilk is one of my fall favorites.
Pumpkin Spice Smoothie
Pumpkin Spice Smoothie
Ingredients
- 1/2 cup pumpkin puree
- 1 banana frozen
- 1/4 cup yogurt plain or vanilla
- 1/4 - 1/2 up Silk almond milk vanilla flavored
- 1-2 tablespoons honey or maple syrup
- 1/2 teaspoon pumpkin pie spice
- 1 cup ice
Instructions
- Blend ingredients together until well combined. Add more almond milk if you prefer a thinner consistency. You can also adjust the honey or maple syrup to your preference.
- Top with granola or pumpkin pie spice.
Our family began drinking almond milk when my daughter was a baby. She had a dairy allergy, that for the most part she has outgrown, but at the time we had to find non-dairy products for her.
