Every year as Mother’s Day approaches I start reflecting on my childhood and memories with my mother. Of course vacations and special events stand out the most. However, my favorite memories are the ones from everyday moments throughout my childhood that felt special with my mom. I remember baking grandma’s cinnamon cookies on weekends and trying new recipes from cookbooks I would check out from the library. My mother worked a lot but she tried her best to make sure we had plenty of time with her. She did little things like pack a special treat with a note in my lunch pail and surprise us with a spontaneous picnic in the middle of Saturday chores. These things didn’t seem like a big deal at the time but looking back they’re some of my favorite childhood memories.
Another favorite memory is taking special trips to a little store not too far from our neighborhood. Whenever we had something to celebrate my mother would let us pick a special treat or activity to do. We often chose to walk to the small corner store to pick out our favorite treats. The store was filled with packaged treats and my pick would always be Little Debbie® Swiss Rolls or Oatmeal Crème Pies. I had several Little Debbie® favorites like the Marshmallow Pies and Zebra Cakes but the Swiss Rolls won almost every time. There’s something nostalgic about seeing them in stores today. It brings back memories of those special events we celebrated and the simplicity of childhood. When small treats remind you of your childhood, it’s the taste you never outgrow!
When I came across Little Debbie® baked goods I wanted to share some of my favorites with the kids. We made an ice cream cake using Little Debbie® Swiss Rolls, vanilla ice cream, whipped cream, and chocolate sauce. This recipe is perfect for summer!

Swiss Rolls Ice Cream Cake
Ingredients
- 10 Little Debbie® Swiss Rolls
- 1.5 qt vanilla ice cream softened
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1 teaspsoon vanilla
- chocolate sauce
Instructions
- Cut Swiss Rolls into 6 slices and place at the bottom of your pan. We used an 8x8-inch pan.
- Spread softened ice cream on top of Swiss Rolls.
- Prepare whipped cream by mixing heavy cream, sugar and vanilla in a stand mixer. Whisk for about 3 minutes or until soft peaks form.
- Spread whipped cream over ice cream and place in freezer for 4-6 hours or overnight.
- Add chocolate sauce before serving; slice into squares.
I love Swiss Cakes and have passed it onto my girls. We have a “right” way to eat them: peel all the chocolate off the outside, eat the ends, then unroll and eat until all you have left is the filled center…yummy! Thanks for the great recipe!!
