Hello friends! Are your kids in school this month or do they start in September? The month of August coming to an end feels like the unofficially end of summer as well. The kids have been back in school for a couple weeks and now we’re ready for fall sports to begin. As much as I look forward to pumpkin spice treats, decorating pumpkins and cooler weather, I’m going to miss the abundance of fresh summer fruits. Figs are one of my favorite seasonal fruits this time of year. My mother in law has a couple trees that produce baskets full of figs. We like to make a fig and goat cheese pizza, a fig arugula salad and recently created this Spice Roasted Figs with Hazelnuts and Vanilla Ice Cream. The warm caramelized spiced sugar fig pairs incredibly well with Breyers Natural Vanilla ice cream and hazelnuts. Today we’re partnering with Breyers to help celebrate their birthday recipe for August! Spiced Roasted Figs
Spice Roasted Figs Spice roasted figs with hazelnuts and vanilla bean ice cream Ingredients
- 2 tbs. sugar
- 1/2 tsp. each ground cinnamon, ground ginger
- 1/8 tsp. ground cloves
- 8 ripe figs, halved lengthwise
- 1 1/3 cups Breyers® Natural Vanilla Ice Cream
- 1/4 cup blanched hazelnuts, toasted, coarsely chopped
Instructions
- Position broiler rack 6 inches from heat source and preheat broiler. Line a large baking sheet with
- aluminum foil.
- In a small bowl, mix sugar and spices. One at a time, dip figs, cut side down, in sugar mixture to
- coat. Then coat figs a second time with sugar mixture and arrange cut side up on baking sheet.
- Broil figs, watching closely, for about 4 minutes, or until sugar melts and begins to caramelize and
- figs soften slightly and begin to ooze their juice.
- Divide figs among 4 bowls. Spoon 1/3 cup of Breyers® Natural Vanilla Ice Cream into each bowl
- and sprinkle with hazelnuts.

We tried this recipe during the last week of summer vacation and it was the perfect treat to celebrate the end of summer!
