Protein Pumpkin Shake

Protein Pumpkin Shake

This post brought to you by Libby’s. All opinions are 100% mine.

Pumpkin Shake filled with protein to help curb hunger and satisfy your sweet tooth.

Protein Pumpkin ShakeHey friends! I’m headed to Utah tomorrow, which means things have been a little busy this past week. With the Easter holiday, packing, and trying to squeeze in every minute with the kids during their spring break I’m almost certain I’ll want to sleep in the hotel the entire trip. With the busy schedule I’ve been relying on protein shakes to get me through the day. As I’ve mentioned before I drink protein shakes/smoothies everyday, especially protein green smoothies. Today I’m sharing a recipe that’s a little different from my usual green smoothie. This protein pumpkin shake is currently my go-to recipe. You’re probably thinking pumpkin … really? Why yes I do love pumpkin during the fall but it’s also great to enjoy throughout the year. Today I’m sharing a pumpkin shake that’s packed with protein and nutrients to help curb hunger and satisfy your sweet tooth.

There are many reasons why I enjoy using Libby’s Pumpkin throughout the year, not only do I love the flavor but the health benefits are great in sweet and savory dishes. As a superfood pumpkin is known for being a good source of fiber, vitamin A, and can help reduce fat and calories in your favorite recipes. Pumpkin is also versatile as a year round vegetable, great for keeping on hand to stir into sauces, oatmeal, and of course smoothies. Protein-Pumpkin-Shake

Homemade Watermelon Kool-Aid Slushies just in time for summer!

Watermelon Slushies

Do you remember drinking slushies on a hot summer day? Swim, drink slushies, and swim some more was pretty much our entire summer schedule as kids. I can recall those memories perfectly. Sitting under a tree, trying to keep cool with a bathing suit, flip flops, and slushie in my hand. The sticky messes my little sister would make all over her face and my mother desperately trying to keep us out of the house until we finished them. My husband and I were talking about this last week and we then realized that our kids have never had slushies before. Wait..what? I had to rectify this immediately. With slushies in mind I thought of another summer drink we had as a teen..Kool-Aid! Who remembers picking out all of your favorite packet flavors? Oh, the horror when you realized you were out of sugar! While those packets are still available today, now you can enjoy pre-made Kool-Aid without the effort. The new 96 ounce pre made Kool-Aid drink was exactly what I needed to make our watermelon slushies.

Kool-Aid-SlushiesI also picked up a container of the powder for a craft project I’ll share with you soon. Mmmm cherry limeade..I can’t wait to show you what I made with it!

Watermelon Kool-Aid Slushies
Serves: 2
  • 3-4 cups ice
  • 2 cups Kool-Aid
  • 1 cup watermelon
  1. Blend ingredients together until desired consistency. Add more ice if needed.

To perfect the slushie add ice as needed until you find the consistency you prefer. I used crushed ice but regular ice will work just fine.

I found the Kool-Aid at Walmart. They were in the process of building Kool-Aid displays down the center aisles, which is where you should be able to find them. If the bottles are not on display check the drink aisle (I almost missed them in the corner).

Jim Dillard, pro fisherman, could be coming to your local Walmart to help promote the new 96oz bottles! There will be product giveaways, t-shirts, games, and more fun activities!

Blueberry Streusel Coffee Cake

blueberry coffee cake

A classic coffee cake with blueberry filling, a pecan and walnut crumb topping, and vanilla glaze.

blueberry coffee cake

Hey friends! How’s the weather where you’re at? It’s going to be 90 today! I have to admit it’s been hard getting things done at home. The kids can’t seem to get enough of walking to the park lately. I can’t blame them but geez walking in the heat yesterday made me want to jump in the lake and swim the afternoon away. It’s hard to remember it’s only Spring with temps like this. Speaking of Spring…berry season is starting, which happens to be my favorite! I’m sure I’ve mentioned it before that we live in a large agricultural area where most fruits and vegetable are easily attainable. Along with farmers markets, many farmers have their own fruit & vegetable stand on their land where you can purchase produce for a fraction of what they cost at a grocery store. It may get hot and sticky with average highs well over 100 during the Summer around here, but I wouldn’t give up access to this kind of produce for anything!

Blueberry coffee cake

Strawberry growers are already setting up stands and soon blueberries, blackberries, and boysenberries will follow. I’m going through a little bit of a blueberry obsession lately. It started off with trying the blueberry yogurt muffin at Starbucks a few weeks ago. Have you tried them? Mmmmm  …they’re my new favorite! I try to keep blueberries in the house regularly for oatmeal and snacks but lately I can’t seem to stop baking with them. This blueberry coffee cake with a streusel topping has also become a regular in the house. Over the weekend I woke up a few hours before the kids, made a cup a coffee, picked up my Kindle and enjoyed a slice of cake all to myself. It was pure bliss!

This coffee cake is filled with a sweet and tangy blueberry filling then topped with a crunchy walnut and pecan crumb topping. To make it even sweeter there’s a vanilla glaze drizzled on top. It’s perfect for brunch parties or weekend guests to enjoy a cup of coffee with.

Triple Chocolate Mint Brownies

Triple Chocolate Mint Brownies with a mint cream filling and a ganache topping.

Triple Chocolate Mint Brownies Recipe

My ultimate favorite dessert has to be double chocolate brownies. There’s something so sinfully comforting about brownies. They’re perfect for every occasion too; whether it’s for a party, school function, or to satisfy a weekend dessert craving. While I love a simple brownie recipe, I also enjoy a variety of brownie recipes with fillings and toppings. This triple chocolate mint brownie recipe was a recent request by my oldest who happens to like all things mint. He’s also the inspirition behind the Mint Ice Cream Cupcakes.

Ice Cream Cupcakes

So the other day I had a conversation with the kids about our favorite desserts and we agreed to try new recipes on the weekends. We have an ongoing list of dessert recipes we want to try and endless books and magazines to draw inspiration from. We thought we’d make a fun game out of it by having the child who suggested the recipe make it with me then everyone gets to rate it. Of course this gives me an excuse to create a memory book (gotta get my paper crafting in somehow). Each child will take a picture with their dessert and we’ll slowly build a recipe/memory book out of it. I have to say I can’t wait to write down what my 2 1/2 year old has to say about the recipes. He has the best responses to the food and I know this will make a funny memory years down the road. :) I’ll try to have a monthly recap of our recipe adventures, with hopefully a lot of new favorite dessert recipes to share and the children’s critiques.

This brownie recipe is semi-homemade using Ghiradelli triple chocolate brownie mix. I buy this stuff in bulk at Costco. It’s our favorite brownie mix, especially with those chocolate chunks in the batter..mmmm. So not only do you get your chocolate fix with the brownie there’s also chocolate chunks inside the batter and a chocolate ganache topping.

Triple Chocolate Mint Brownies

Chocolate Chip Cookie Cheesecake Bars

Reese's Cheesecake Bars

This post is brought to you by Pillsbury.
Cheesecake has to rank among one of my favorite desserts. Cookies, however, will always be my all time favorite. There’s something comforting about the simplicity of a warm cookie that brings back memories of my childhood. I grew up baking cookies with my mother and grandmother and to this day it’s my favorite thing to do with my daughter. Recently I combined my two favorite desserts into a gluten free cookie dough cheesecake bar with mini Reese’s. Reese's Cheesecake Bars

I made a semi-homemade version of this recipe using the new Pillsbury gluten free cookie dough. The cookie dough was a mixture between a soft and crispy crust that complimented the cheesecake filling. The Reese’s were a necessary bonus, of course. A chocolate chip cookie crust, cheesecake filling, and Reese’s..sounds like the perfect combination to me! I have to admit I was pretty glad to see these cheesecake bars go quickly, I’m afraid I would’ve eaten them all if everyone else didn’t. I’m planning on making them again for a birthday party in a few weeks, I’m thinking of adding chocolate chips to the batter instead of Reese’s.

Pillsbury’s new gluten free cookie dough is great for creating desserts with or enjoying a delicious gluten free chocolate chip cookie. Over the last few months we’ve been incorporating more gluten-free meals into our diet and I’ve found that eating gluten-free is not as easy for someone who loves baking like I do. I’m still new to using gluten-free recipes but I’m always excited to try new gluten free products that can help  make things easier. I purchased the only container left at my store but I’m already looking forward to trying new gluten free desserts when I get a hold of more.

Chocolate Chip Cookie Cheesecake Bars

  1. 10 oz package cream cheese, room temperature
  2. 1 tsp sour cream
  3. 1/4 cup sugar
  4. 1 egg
  5. 1 tsp vanilla
  6. Pillsbury gluten free cookie dough
  7. 1 cup Mini Reese's

  1. Preheat oven to 325; line 8x8 baking dish with parchment paper.
  2. Press cookie dough into baking dish, bake for 7 minutes. Remove from oven and allow to cool.
  3. Combine cream cheese, sour cream, and sugar in stand mixer.
  4. Add egg and vanilla; mix until well combined.
  5. Pour cheesecake filling on cookie dough, add mini Reese's on top.
  6. Bake for 25-30 minutes. Allow to cool completely before slicing.

Dark Chocolate Peppermint Bark

Dark Chocolate Peppermint Bark

Easy dark chocolate peppermint bark recipe made with Andes peppermint pieces.

Dark Chocolate Peppermint Bark
I’ve always been a fan of online courses. In college I took every online course in my major and even for every prerequisite I could. I mean honestly what’s not to love about courses you can take while lounging in pajamas? Needless to say that I think craft and food courses online is pretty ingenious! So when I heard about Craftsy, an online community that offers just that..craft and food courses, I was pretty excited to see what they had to offer.

I was pleasantly surprised to see a variety of courses available. Craftsy offers everything from cake decorating, to paper crafts, photography, and more! I had the opportunity to view the Sweet & Savory Food Gifts course. One of the segments was on how to make chocolate bark and tempering chocolate. This inspired me to make a batch of dark chocolate peppermint bark for my daugther’s Christmas program last week. There’s a tutorial and recipe on how to make traditional layers peppermint bark in the course as well.

The course offered a variety of food gift recipes and even ideas on how to package them as gifts. Along with the video tutorials you’ll find printable gift cards, recipes, and a metric conversion guide to assist you throughout the course. Along with the instructional videos you may ask questions and received personalized feedback. You also have the ability to participate in group discussions and share photos of your completed project. The videos are separated into segments and allow you to bookmark for future reference.

What I enjoyed about the course is that I’m able to pause and resume as I pleased. Having toddlers in the house means I couldn’t sit through the entire course without a few distractions so I relished in the fact that the segments were broken into small videos and that I could resume to the course throughout the day.Screen shot 2013-12-19 at 2.33.10 AM

It’s no secret that I have a bit of a sweet tooth. It’s definitely my weakness and I’ve struggled for years to curb my baking and indulging in sweets. Peppermint Muddy Buddies

Peppermint Muddy Buddies

Easy peppermint muddy buddies with white chocolate peppermint M&M’s.

Peppermint Muddy Buddies

So it’s no secret that I love muddy buddies right? I mean I think I find a new flavor combination just about every few weeks. My kids love this stuff! Every time they see me place a box of Chex cereal in my cart they immediately ask what flavor I plan on making. Then they are argue over which is their favorite and I should make. The last two times I’ve made muddy buddies we’ve made them with peppermint extract. My oldest loves anything and everything mint so clearly these are his favorite. Last time we combined the peppermint chocolate covered Chex cereal with Andes peppermint baking chips..mmm! Those are my favorite to bake with this time of year!

This last time we made muddy buddies I tossed in white chocolate peppermint M&M’s into the mix. These are perfect for handing out to teachers, co-workers, or to have on hand at holiday parties. Speaking of parties, my lovely friends and I have gathered for another virtual progressive dinner party again. This time our theme is holiday bites! Be sure to stop by and bring an appetite because there are plenty of ideas for a holiday party!
