Hey friends! How’s the weather where you’re at? It’s going to be 90 today! I have to admit it’s been hard getting things done at home. The kids can’t seem to get enough of walking to the park lately. I can’t blame them but geez walking in the heat yesterday made me want to jump in the lake and swim the afternoon away. It’s hard to remember it’s only Spring with temps like this. Speaking of Spring…berry season is starting, which happens to be my favorite! I’m sure I’ve mentioned it before that we live in a large agricultural area where most fruits and vegetable are easily attainable. Along with farmers markets, many farmers have their own fruit & vegetable stand on their land where you can purchase produce for a fraction of what they cost at a grocery store. It may get hot and sticky with average highs well over 100 during the Summer around here, but I wouldn’t give up access to this kind of produce for anything!

Strawberry growers are already setting up stands and soon blueberries, blackberries, and boysenberries will follow. I’m going through a little bit of a blueberry obsession lately. It started off with trying the blueberry yogurt muffin at Starbucks a few weeks ago. Have you tried them? Mmmmm  …they’re my new favorite! I try to keep blueberries in the house regularly for oatmeal and snacks but lately I can’t seem to stop baking with them. This blueberry coffee cake with a streusel topping has also become a regular in the house. Over the weekend I woke up a few hours before the kids, made a cup a coffee, picked up my Kindle and enjoyed a slice of cake all to myself. It was pure bliss!

This coffee cake is filled with a sweet and tangy blueberry filling then topped with a crunchy walnut and pecan crumb topping. To make it even sweeter there’s a vanilla glaze drizzled on top. It’s perfect for brunch parties or weekend guests to enjoy a cup of coffee with.

Blueberry Streusel Coffee Cake

Ingredients

  1. Filling:
  2. 2 cups blueberries
  3. 1 cup water
  4. 2 tbsp lemon juice
  5. 1 1/4 cups sugar
  6. 1/3 cup cornstarch
  7. Cake:
  8. 3 cups flour
  9. 1 cup sugar
  10. 1 tsp baking powder
  11. 1 tsp baking soda
  12. 1 cup cold butter, cubed
  13. 2 eggs, lightly beaten
  14. 1 cup sour cream
  15. 1 tsp vanilla extract
  16. Crumb topping:
  17. 1/2 cup flour
  18. 1/2 cup sugar
  19. 1/4 cup butter, softened
  20. 1/4 cup pecans, chopped
  21. 1/4 cup walnuts, chopped
  22. Vanilla Glaze:
  23. 1/2 cup confectioners sugar
  24. 2 tsp milk
  25. 1/2 tsp vanilla extract

Instructions

  1. In a large saucepan cook blueberries and water over medium heat for 5 minutes. Combine sugar and cornstarch in a small bowl. Add lemon juice, sugar and cornstarch to fruit; bring to a boil. Cook for 2 minutes or until thickened. Set aside to cool.
  2. In a large bowl combine flour, sugar, baking powder, and baking soda. Add butter until mixture becomes coarse crumbs. Stir in eggs, sour cream, and vanilla.
  3. Spread half the batter into a greased 13x9 inch pan. Add blueberry filling then remaining batter.
  4. Sprinkle topping over cake.
  5. Bake at 350 for 40-45 minutes. Combine confectioners sugar, milk, and vanilla extract in small bowl. Drizzle over warm cake.

Triple Chocolate Mint Brownies Recipe

My ultimate favorite dessert has to be double chocolate brownies. There’s something so sinfully comforting about brownies. They’re perfect for every occasion too; whether it’s for a party, school function, or to satisfy a weekend dessert craving. While I love a simple brownie recipe, I also enjoy a variety of brownie recipes with fillings and toppings. This triple chocolate mint brownie recipe was a recent request by my oldest who happens to like all things mint. He’s also the inspirition behind the Mint Ice Cream Cupcakes.

So the other day I had a conversation with the kids about our favorite desserts and we agreed to try new recipes on the weekends. We have an ongoing list of dessert recipes we want to try and endless books and magazines to draw inspiration from. We thought we’d make a fun game out of it by having the child who suggested the recipe make it with me then everyone gets to rate it. Of course this gives me an excuse to create a memory book (gotta get my paper crafting in somehow). Each child will take a picture with their dessert and we’ll slowly build a recipe/memory book out of it. I have to say I can’t wait to write down what my 2 1/2 year old has to say about the recipes. He has the best responses to the food and I know this will make a funny memory years down the road. :) I’ll try to have a monthly recap of our recipe adventures, with hopefully a lot of new favorite dessert recipes to share and the children’s critiques.

This brownie recipe is semi-homemade using Ghiradelli triple chocolate brownie mix. I buy this stuff in bulk at Costco. It’s our favorite brownie mix, especially with those chocolate chunks in the batter..mmmm. So not only do you get your chocolate fix with the brownie there’s also chocolate chunks inside the batter and a chocolate ganache topping.

Triple Chocolate Mint Brownies

Ingredients

  1. Brownies:
  2. Ghirardelli triple chocolate brownie mix
  3. 1 egg
  4. 1/3 vegetable oil
  5. 1/3 cup water
  6. Mint Creme Filling:
  7. 2 1/2 c. powdered sugar
  8. 3 tbsp unsalted butter, softened
  9. 3 tbsp whipping cream
  10. 3 oz cream cheese, softened
  11. 1/4 - 1/2 tsp mint extract
  12. 4-6 drops green food coloring
  13. Chocolate ganache topping:
  14. 1/3 c whipping cream
  15. 12 oz semi-sweet chocolate chips
  16. 1/3 cup unsalted butter

Instructions

  1. Preheat oven to 325; line 8x11 inch baking dish with parchment paper.
  2. Combine brownie mix, egg, water, and oil. Bake 40-45 mins, or according to package directions.
  3. Cool brownies.
  4. In a large bowl or stand mixer with the paddle attachment combine butter and cream cheese. Add whipping cream, mint extract, and food coloring.
  5. Slowly add powdered sugar until well combined.
  6. Spread over cooled brownies and refrigerate for 1 hour.
  7. In a small saucepan melt chocolate chips, whipping cream, and butter together. Pour over brownies, return to refrigerator for 1-2 hours or until chocolate has set.

Cheesecake has to rank among one of my favorite desserts. Cookies, however, will always be my all time favorite. There’s something comforting about the simplicity of a warm cookie that brings back memories of my childhood. I grew up baking cookies with my mother and grandmother and to this day it’s my favorite thing to do with my daughter. Recently I combined my two favorite desserts into a gluten free cookie dough cheesecake bar with mini Reese’s. Reese's Cheesecake Bars

I made a semi-homemade version of this recipe using the new Pillsbury gluten free cookie dough. The cookie dough was a mixture between a soft and crispy crust that complimented the cheesecake filling. The Reese’s were a necessary bonus, of course. A chocolate chip cookie crust, cheesecake filling, and Reese’s..sounds like the perfect combination to me! I have to admit I was pretty glad to see these cheesecake bars go quickly, I’m afraid I would’ve eaten them all if everyone else didn’t. I’m planning on making them again for a birthday party in a few weeks, I’m thinking of adding chocolate chips to the batter instead of Reese’s.

Pillsbury’s new gluten free cookie dough is great for creating desserts with or enjoying a delicious gluten free chocolate chip cookie. Over the last few months we’ve been incorporating more gluten-free meals into our diet and I’ve found that eating gluten-free is not as easy for someone who loves baking like I do. I’m still new to using gluten-free recipes but I’m always excited to try new gluten free products that can help  make things easier. I purchased the only container left at my store but I’m already looking forward to trying new gluten free desserts when I get a hold of more.

Chocolate Chip Cookie Cheesecake Bars

Ingredients

  1. 10 oz package cream cheese, room temperature
  2. 1 tsp sour cream
  3. 1/4 cup sugar
  4. 1 egg
  5. 1 tsp vanilla
  6. Pillsbury gluten free cookie dough
  7. 1 cup Mini Reese's

Instructions

  1. Preheat oven to 325; line 8x8 baking dish with parchment paper.
  2. Press cookie dough into baking dish, bake for 7 minutes. Remove from oven and allow to cool.
  3. Combine cream cheese, sour cream, and sugar in stand mixer.
  4. Add egg and vanilla; mix until well combined.
  5. Pour cheesecake filling on cookie dough, add mini Reese's on top.
  6. Bake for 25-30 minutes. Allow to cool completely before slicing.

I’ve always been a fan of online courses. In college I took every online course in my major and even for every prerequisite I could. I mean honestly what’s not to love about courses you can take while lounging in pajamas? Needless to say that I think craft and food courses online is pretty ingenious! What I enjoyed about the course is that I’m able to pause and resume as I pleased. Dark Chocolate Peppermint Bark

Ingredients

  1. 2 cups dark chocolate
  2. 1 tsp vegetable shortening, melted
  3. 1 tsp peppermint extract
  4. 1 cup Andes peppermint pieces

Instructions

  1. Line baking sheet with parchment paper.
  2. Melt dark chocolate over double boiler. Once melted stir in shortening and peppermint extract.
  3. Pour a thin layer of chocolate onto prepared baking sheet. Use a spatula to spread chocolate evenly.
  4. Sprinkle peppermint pieces on top of melted chocolate.
  5. Refrigerate for 15 minutes; break into pieces and store in tightly closed container.

So it’s no secret that I love muddy buddies right? I mean I think I find a new flavor combination just about every few weeks. My kids love this stuff! Every time they see me place a box of Chex cereal in my cart they immediately ask what flavor I plan on making. Then they are argue over which is their favorite and I should make. The last two times I’ve made muddy buddies we’ve made them with peppermint extract. My oldest loves anything and everything mint so clearly these are his favorite. Last time we combined the peppermint chocolate covered Chex cereal with Andes peppermint baking chips..mmm! Those are my favorite to bake with this time of year!

This last time we made muddy buddies I tossed in white chocolate peppermint M&M’s into the mix. These are perfect for handing out to teachers, co-workers, or to have on hand at holiday parties. Speaking of parties, my lovely friends and I have gathered for another virtual progressive dinner party again. This time our theme is holiday bites! Ingredients

  1. 1 1/2 cups Ghirardelli milk chocolate chips
  2. 1 tsp peppermint extract
  3. 7 cups Rice Chex cereal
  4. 1 1/2 cups powdered sugar
  5. 1 cup white chocolate peppermint M&M's

Instructions

  1. Melt chocolate over double boiler.
  2. Stir in peppermint extract into melted chocolate.
  3. Toss in half of the cereal into melted chocolate and stir. Add renaming cereal and toss until evenly covered.
  4. Add powdered sugar to chocolate coated cereal and mix well.
  5. Stir in M&M's.

I was a freshman in college the first time I had cup of coffee. My best friend and I had a break between classes and she suggested some coffee to help prepare us for our next class. I remember standing at the counter of the coffee shop completely unsure of what to order. I asked her to order me the sweetest latte she could think of and from that moment on our coffee trips became one of my favorite memories of college. To this day I find myself at a coffee shop at least twice a week with a good book in my hands and a hot cup of coffee or seasonal latte. It’s a great afternoon treat I’ve been indulging in lately. Last week I wanted to put a healthy twist to my latte by adding protein to my drink, providing me with a filling treat.

You can find Green Mountain ice latte in mocha or vanilla in the dairy aisle. There’s also a coupon available here.

Iced LatteI used the latte drink to make ice cubes and then once frozen I added them to a blender along with half a cup of the latte, protein powder, and a banana. The banana helped give it some consistency along and the ice cubes turned it into a frosty protein latte.

Ingredients

  1. 6 iced latte cubes
  2. 1/2 cup mocha latte
  3. 1-2 tbsp protein powder
  4. 1 small banana

Instructions

  1. Combine all ingredients in a blender until smooth.

The peppermint craze has officially begun in our home. I picked up a pack of candy canes last week and it started a string of peppermint baked goods. I forget how much I enjoy the combination of peppermint and chocolate until the holidays roll around. To satisfy my craving I made a batch of double chocolate peppermint cookies over the weekend. These cookies are filled with rich chocolate chocolate chunks, peppermint extract, and crushed candy cane pieces on top. You could use Andes peppermint baking pieces if you prefer a softer texture instead of the candy cane pieces.

Now that it’s almost the middle of November I’m warming up to the idea of pulling out the holiday decor and crafts. I know the next month will come and go faster than I ever want it to so I’m thinking I should get a head start on the decorating. On another note, is anyone else already thinking about black Friday shopping? I’m not hard core about it but I usually head out around 6am to see what deals I can find. I’m sure after the stress of shuffling through long lines and hundreds of other customers I’ll have some major chocolate cravings. I’ll be sure to have these peppermint cookies on hand just in case. And a cup of hot cocoa. It’s one of my favorite weekends of the year and I can’t wait to start the decorating, gift wrapping, Christmas caroling fun!

Ingredients

  1. 1 cup unsalted butter, softened
  2. 1 1/2 cups sugar
  3. 2 eggs
  4. 1 tsp vanilla extract
  5. 1 tsp peppermint extract
  6. 2 cups all purpose flour
  7. 2/3 cup cocoa powder
  8. 3/4 tsp baking soda
  9. 1/4 tsp salt
  10. 1 1/2 cups chocolate chunks
  11. 1/2 cup candy cane pieces

Instructions

  1. Preheat oven to 350.
  2. Beat butter, sugar, eggs, vanilla and peppermint until light and fluffy.
  3. In a large bowl stir together flour, cocoa powder, baking soda, and salt.
  4. Slowly add flour mixture to butter mixture until well combined.
  5. Stir in chocolate chunks.
  6. Use cookie scoop to drop cookies onto ungreased baking sheet.
  7. Press candy cane pieces on top.
  8. Bake 8 to 10 minutes.
  9. Cool slightly then transfer to wire rack to cool completely.
