Easy 4-ingredient Peppermint Truffles recipe.
Doesn’t it seem like pumpkin spice gets pushed over as soon as Halloween is over? Once we hit November and the stores are filled with Christmas decor and music, peppermint recipes take center stage. I’m not complaining at all! As much as I love pumpkin spice I’m ready for everything involving peppermint. I have several peppermint crafts and recipes to share with you over the next few weeks. I’ve had a few ready last month but told myself to wait just a little longer. I may share another later this week because I’m just so excited and it’s a great gift idea or stocking stuffer for kids. Now how about these easy truffles?
These peppermint truffles were made with International Delight Peppermint Chocolate Truffle creamer. I found a similar recipe on their website and knew I had to give a try. You won’t believe how easy they are to make! You only need 4 ingredients – chocolate, International Delight creamer, butter, and toppings of your choice. You can use crushed peppermints, cocoa powder, sprinkles, miniature chocolate chips, or nuts if you’d like. To make the truffles you warm the ingredients together then place in a shallow bowl in the refrigerator. This will help the mixture firm up an easy to shape into small 1-inch balls. The recipe can yield up to 30 truffles. I used a small cookie scoop so mine were a little bit bigger and made about 20 truffles instead. The cookies scoop made it easy to scoop the out of the pan and into even balls. For my toppings I used dutch process cocoa powder and crushed candy canes. Be aware that shaping the balls gets really sticky and you’ll want to have a wet towel nearby. Once the truffles are covered in your toppings place back into the refrigerator until ready to serve.
Easy Peppermint Truffles
Ingredients
- 12 ounces chocolate chips
- 1/3 cup I.D. Chocolate Peppermint Truffle creamer
- 1 tablespoon unsalted butter
- toppings: crushed candy canes cocoa powder
Instructions
- In a small saucepan melt chocolate, creamer and butter over low heat. Stir constantly until smooth.
- Place chocolate mixture into shallow bowl; refrigerate for at least 4 hours or overnight.
- Scoop mixture and shape into 1-inch balls. Immediately roll in toppings.
- Refrigerate until ready to serve.
