Mint Chocolate Chip Ice Cream Cupcakes

Ingredients

  • Chocolate cake mix
  • 3 eggs
  • ½ cup oil
  • 1 ¼ cup water
  • Mint chocolate chip ice cream
  • Optional: Magic Shell or melted chocolate and chocolate shavings

Instructions

  • Preheat oven to 350
  • Pour one tablespoon of batter into a lined baking pan. Bake for 10-12 minutes; cool.
  • Top each cupcake with one scoop of ice cream. Use a spatula or spoon to spread ice cream to cover the entire cupcake. Cover pan with foil or plastic wrap. Freeze overnight or until ice cream is firm.
  • Gently peel liners off cupcakes and drizzle with magic shell chocolate topping. Quickly add chocolate shavings before chocolate is firm.
  • Serve immediately or freeze until ready to eat.
