- Chocolate cake mix
- 3 eggs
- ½ cup oil
- 1 ¼ cup water
- Mint chocolate chip ice cream
- Optional: Magic Shell or melted chocolate and chocolate shavings
Preheat oven to 350
Pour one tablespoon of batter into a lined baking pan. Bake for 10-12 minutes; cool.
Top each cupcake with one scoop of ice cream. Use a spatula or spoon to spread ice cream to cover the entire cupcake. Cover pan with foil or plastic wrap. Freeze overnight or until ice cream is firm.
Gently peel liners off cupcakes and drizzle with magic shell chocolate topping. Quickly add chocolate shavings before chocolate is firm.
