Chicken Tortilla Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 1/2 tablespoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 14.5 ounce can fire roasted tomatoes
  • 32 ounces chicken broth
  • 1 cup frozen corn or 1 can of corn;drained
  • 1 15 ounce can black beans
  • 1/4 cup fresh cilantro
  • 2 boneless chicken breast shredded
  • Garnish:
  • tortilla chips
  • avocado
  • monterey jack cheese
  • green onions

Instructions

  • In a large pot sauté onion, garlic, bell peppers with olive oil.
  • Add in chili powder, salt, pepper, tomatoes, and broth; bring to a boil. Reduce heat and simmer for 10 minutes.
  • Add corn, beans, chicken, and cilantro; simmer for 15-20 minutes.
  • Garnish with fresh lime juice, chopped cilantro, avocado, green onions, and monetary jack cheese.
