Raisin-Nut Pumpkin Muffins

Ingredients

  • 1 15- ounce can Libby’s 100% pure pumpkin
  • 1 box vanilla cake mix
  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup raisins
  • 1/4 cup walnuts

Instructions

  • Preheat oven to 350 degrees. Line muffin pan with 12 liners.
  • In a large bowl mix pumpkin puree, cake mix, chia seeds, cinnamon, nutmeg, and cloves until well combined. Stir in raisins and walnuts.
  • Use a cookie scoop to evenly distribute batter into muffin pan.
  • Bake for 20-22 minutes.
