Summertime brings many opportunities for family fun. We like to spend our days traveling across California visiting our favorite vacation spots. When we’re not on the road we’re lazing out by the pool or running to the park. One thing I have noticed about the kid’s being home for the summer is that it seems like my days revolves around food. Between breakfast, lunch, dinner and snacks I feel like I’m always in the kitchen. This is why I think having a variety of easy, on-the-go snacks readily available becomes handy. We like to stock our fridge with healthy snacks that are right at eye level for the kids so that they can grab it and go. With three kids this makes things easier for me and allows them to independently make healthy food choices. Sometimes we like to take some of our favorite snacks and make something tasty out of them like these Mozzarella Cheese Sticks.
If there’s one snack my kids could eat everyday, it would be string cheese. We keep Horizon organic string cheese in our fridge at all times. They’re the perfect snack whether you’re on the go or at home and a great source of protein. When summer ends and the kids are back in school, string cheese will be their number one requested lunch box snack. While we’re still enjoying summer we find new ways to incorporate string cheese into our snack routine. Recently after a day spent at the pool the kids requested a snack to hold them over until dinnertime. I quickly whipped up a batch of mini cheese sticks using only a few ingredients. These cheese sticks cook very quickly and are best when eaten right away.
Homemade Mozzarella Cheese Sticks
Mozzarella Cheese Sticks
Ingredients
- 6 Cheese sticks cut in half
- ¼ cup flour
- 1 egg beaten
- ¾ cup Italian breadcrumbs
- Oil
Instructions
- Heat oil over medium high.
- Cut string cheese in half to make 12 small cheese sticks.
- Dip cheese sticks in flour, next the egg, then coat with breadcrumbs.
- Drop cheese sticks in hot oil for 30 seconds on each side.
- Remove from heat and place on a napkin to remove excess oil.
A favorite snack the kids like when we’re on the go is fruit and cheese kabobs. Is it just me who notices this or will kids’ eat almost any food that’s on a stick? My younger two love eating kabobs with a variety fruits, veggies, and cheese. One of our go-to snacks when we hit the road is a fruit and cheese kabob, with a side of cheese crackers and marshmallows. For the kabobs we use caramel apple sticks that you can find at Michaels and small disposable dipping cups for the snacks on the side. Then we pack it up in a to-go container and hit the road.
