Fall always brings the nostalgic feeling of baking with my mom as a child. The memories I hold onto dearly from those early days are what helped develop my love of baking. Now that I’m a mother I make it a priority to recreate those memories with my own children. As soon as fall arrives we gather our favorite recipes and browse through classic cookbooks to try new ones. Thankfully the kids enjoy their time in the kitchen as much as I do. To be honest, most of our fall favorites revolve around apple and pumpkin recipes. However, we do enjoy a classic blondies recipe during the fall. This pecan blondies recipe makes a wonderful treat to enjoy on a chilly fall night or while watching a football game on Sundays.
My kitchen essential during this busy baking season is Pam cooking spray. If you’re like me and you enjoy making a batch of brownies, blondies, or cakes regularly you know how handy it is to keep Pam spray around. We especially like using it when we’re baking blondies. The spray helps protect the batter from sticking and makes cutting slices a breeze. When making blondies I like to thoroughly grease the pan, including the sides. After the blondies have baked and cooled, you should be able to easily cut a perfect slice. I’ve tried several Pam sprays and found that the original and baking cooking spray are my favorite.
Pecan Blondies Recipe
Pecan Blondies
Ingredients
- 1 cup unsalted butter melted and cooled
- 1 1/2 cups firmly packed light brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 3/4 cup chopped pecans
Instructions
- Preheat oven to 350 degrees. Spray 8-inch baking pan with Pam nonstick spray.
- In a medium bowl, whisk together melted butter and brown sugar. Slowly add eggs and vanilla; whisk until smooth.
- In a separate bowl, whisk flour, baking powder, and salt.
- Gradually add egg mixture to flour mixture. Gently stir in pecans.
- Spread into prepared baking pan.
- Bake for 20-22 minutes, or until toothpick inserted in center comes out clean.
- Cool on wire rack or serve warm.
This recipe can easily be adapted to include your favorite nuts or baking chips. We’ve tried variations with chocolate chips, butterscotch chips, walnuts, and pecans. You can make this treat even more decadent by serving it warm with vanilla ice cream and caramel sauce.
