Family Movie Night

It’s Spring break and we had big plans for a beach trip. The kids were excited, I was excited. But unfortunately my husbands schedule changed last minute and we’ve had to cancel our trip. *tear* To make it up to the kids I have a week filled with fun activities that we’ll be doing at home and at local venues. Last night we had a family movie night! But not our usual family movie night, I went all out with a chili dog and snack bar. The kids loved it!

Here’s a list of the snacks I included:

Snack’rs Snack Mix

Snack’rs Yogurt Trail Mix

Snack’rs Yogurt Covered Pretzels

Snack’rs Mixed Nuts

Snack’rs Dry Roasted Peanuts

Popcorn

Carrots

Twizzlers

I went shopping earlier this week for our movie night and wanted to try a new recipe. I decided to make peanut butter filled chocolate cupcakes with ganache. Are you surprised? You know how we love our peanut butter and chocolate mix around here. ;) I adapted the recipe from Food Network to make mine semi-homemade.

To make your own peanut butter filled cupcakes bake your cupcakes according to package. Once they have cooled hollow out the center. I used the back of a large Wilton tip and found it worked great!

For the filling:
1/2 cup unsalted butter, softened 
1 cup creamy peanut butter
1 1/4 cups sifted confectioners’ sugar
To make the filling combine butter and peanut butter until smooth. Slowly incorporate the confectioners’ sugar and mix 3-5 minutes. Put it into a pastry bag and pipe into hollowed center. I didn’t bother using a tip for this. 
Ganache:
4 ounces of semi-sweet chocolate chips
1/2 heavy cream
For the ganache place chocolate chips into a bowl. In a small saucepan heat your heavy cream then remove and pour on top of your chocolate. Let it stand for a minute then whisk until smooth. Allow it cool for 5-10 minutes. Dip the tops of the cupcakes into the ganache and sprinkle chopped peanuts on top. You can place them in the refrigerator to help harden the ganache if it’s too runny.

How cute are these popcorn boxes? In case you’re wondering I found them at Hobby Lobby next to the carnival party supplies. The hot dog holders are in the same section.

We made these “cars” out of boxes. They’ve never been to a drive-in so this was fun for them. My son has plans for his. He wants to add headlights, backlights, and a steering wheel. Apparently I didn’t get creative enough with the wrapping paper and paper plates. :)

We began our movie night watching my daughter’s favorite movie, Beauty and the Beast. 

So it wasn’t the beach, but we sure had a fun movie night! Tomorrow we’re having a picnic at the park and going bowling. I can’t wait to see my toddler bowl for the first time!

Sounds like you have a wonderful spring break planned! The cupcakes sound delicious – how can you go wrong with peanut butter and chocolate? They’re just meant to be together :)

Ganache I never made WOW it seems so easy. Cupcakes are my hubb’s favorite. I ‘ll make a cupcake cake May 2 nd. for his 88 th yep! seniors. I will make this one with special (lemon is his fav. ) I’ll add a few in center???? not sure yet. Coffee girls while cupcakes are baking hahahaha

Having appetizers for dinner is one of my kids’ favorite meals! This looks so fun. We have a family movie night about once a week or so, and it’s so fun. I’m coming back later to pin those cupcakes !
