Happy Monday my friends! Today a few friends and I are sharing a favorite summertime recipe. These mini berry pies are great for backyard barbeques and the Fourth of July.

Mini Strawberry Blueberry Pies

I love using berries in everything I possibly can during the Summer. Every Wednesday we head to the farmer’s market and buy big baskets of freshly picked blueberries and strawberries for the week. We usually go through the baskets by the weekend and anxiously await for our next farmer’s market trip. I knew I wanted to make a few berry desserts last week so I picked up an extra basket of the two and made new recipes to share with you. Later this week I’ll have a recipe for kids using this mixed berry filling…it’s one of our favorites!

Ingredients
  

  • 2 cup strawberries
  • 1/2 cup blueberries
  • dash of salt
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 2 teaspoons cornstarch
  • Pie dough I used Pillsbury

Instructions
 

  • Preheat oven to 375.
  • Roll out your pie dough and fill mini pie dishes. Use a small star cookie cutter to cut stars for the top of the pies. You can layer on as many stars as you'd like, but you may need to slightly increase the baking time if you cover the entire pie dish.
  • Toss berries with lemon juice, salt, cornstarch, and sugar in a sauce pan and bring to a boil. Reduce heat and simmer for 5 minutes.
  • Fill about 1/4-1/2 cup of berry pie filling depending on the size of your pie dish.
  • Bake for 20 minutes.
