Tropical Fruit Pizza

My kids pretty much love every fruit that exists, which I’m happy about since I do too! I’m trying to scale back on baking and instead making more desserts out of fruit. Some of our favorites are apple slices with peanut butter and berries with whipped cream. This week we tried something new and made a Tropical Fruit Pizza.

I got the recipe from Dole using their tropical fruit and strawberries. This was seriously so easy to make and I’m excited to have a new recipe that the kids enjoy.

 

 

 

To make your own tropical fruit pizza I’ve added the recipe below. The instructions say to spread the mixture on a baking sheet but I put wax paper on the inside of a round cake pan
instead.

 

Tropical Coconut Pizza Recipe

                                    1 container (8 oz.) cream cheese with pineapple, softened
                                    1/4 cup sugar
                                    1 cup thawed whipped topping
                                    1/2 cup flaked coconut, toasted
                                    1 can (15.25 oz.) DOLE Tropical Fruit, drained
                                    1 cup sliced DOLE Strawberries
                                    1 kiwi fruit, peeled and sliced
·      Beat cream cheese and sugar until
light and fluffy.  Fold in whipped
topping and coconut.

Line baking sheet with waxed
paper.  Spread cream cheese mixture into
8-inch circle, on baking sheet, building up sides slightly with back of
spoon.  Freeze 4 hours or until firm.
·
Place cream cheese crust on
serving plate.  Garnish crust with
additional toasted coconut, if desired.
Arrange tropical fruit, strawberries and kiwi on crust.  Serve immediately.

I know I said I’m trying to cut back on baking but this would go great with a cookie crust. I think we’ll try that next time and see how we like it. :)

So pretty & colorful! And you’re so lucky your kids will eat such great fruit – I might have to try this to get some good stuff into my kids :)

Love this dessert pizza! There’s so much delicious fruit! I don’t think I would need a cookie crust with this.
