BBQ Chicken Salad Recipe – barbecue chicken salad with Hidden Valley Greek yogurt ranch dressing and barbecue sauce. BBQ Chicken SaladAs summer approaches we’re all getting a little excited for a break. We’re looking forward to long summer nights, staying up late watching movies in forts made of sheets and twinkle lights. It also goes without saying that we can’t wait to swim all day and BBQ as many nights of the week that we can. The last few weeks have been absolutely beautiful and you can bet we’re already enjoying the pool. A couple weekends ago we spent our days lounging by the pool, blowing up a million inflatable water toys, and enjoying my father-in-laws amazing skills on the grill. Grilled Chicken Sometimes I need a little change from my ordinary salad made of spinach, tomatoes, cucumbers and eggs. Yes, that’s actually what I eat most days for lunch. It’s so simple but as you may have noticed from the ingredients list – it lacks flavor. To change things up I’ve been testing out new salad combinations that the whole family will enjoy. When I asked my husband what he suggested I add to our mundane salad routine he said I could try adding barbecued chicken to it. We add grilled chicken to our salads all the time but I was looking for something a little different. His suggestion inspired this barbecue chicken salad made with an abundance of fresh veggies, and then topped with barbecue sauce and ranch dressing. The salad is made up of a head of romaine lettuce, tomato, red onion, avocado, black beans, corn, cheddar cheese, tortilla chips, ranch dressing, barbecue sauce, and grilled chicken. So basically everything my everyday salads are lacking. This was SO good and my husband was definitely a fan. I think the ranch and barbecue sauce was his favorite. We used toppings we eat the most but you can substitute the ingredients for whatever vegetables you prefer. Salad Recipes

BBQ Chicken Salad

Ingredients
  • romaine lettuce
  • 1 cup black beans
  • 1 cup corn
  • 1 avocado, chopped
  • 1/2 red onion, chopped
  • 2 tomatoes, chopped
  • 1/2 cup olives, sliced
  • 1/2 cup cheddar cheese
  • 1 cup tortilla strips
  • 2 chicken breast, grilled and chopped
  • Toppings:
  • barbecue sauce
  • ranch dressing
Instructions
  1. Combine ingredients in a large bowl. Drizzle barbecue sauce and dressing on top.

BBQ Chicken Salad Recipe Ranch DipIn between playing in the pool, I whipped up this quick and easy salad as well as this Greek yogurt ranch dip. The new Hidden Valley Greek yogurt dip mix is incredibly easy to make and taste great with carrots, mini peppers, and broccoli. You simply use one packet of the dip and mix it with 1 ½ cups Greek yogurt, then chill for an hour or until ready to serve. Super simple and perfect for summer parties. can’t wait to make it! One concern; I’m diabetic and count carbs. I would love more low carb recipes with the actual carb count. Thank you!
