Tuscan Baked Chicken and Beans

 My mother in law seen this recipe in Cooking Light magazine about a year ago and passed it on to me. I make this so often I thought I’d share the recipe with you, and trust me it’s a great one!  I have adapted the recipe a little by adding garlic and using boneless, skinless chicken breast.
Recipe adapted from Cooking Light 
Chicken 1/4 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 3 slices bacon
1 cup chopped onion
1/8 teaspoon kosher salt
2 cups spinach
1/2 teaspoon chopped fresh rosemary
2 (16-ounce) cans cannellini or other white beans, rinsed and drained
1 (14.5-ounce) can diced tomatoes, undrained 
2 cloves of garlic, minced
 
-Preheat oven to 350°
-Cut chicken breast into halves Season with 1/4 teaspoon salt and pepper. Cook bacon in a 12-inch ovenproof skillet over medium-high heat until crisp. Remove bacon from pan; chop and set aside, reserving drippings in pan.
-Add chicken pieces to reserved drippings in pan; cook for 2 minutes on each side or until browned. Remove chicken from pan; set aside. (note: I transferred my ingredients into a casserole dish instead of making this a one pot meal).
-Add onion, garlic, and 1/8 teaspoon salt to pan; reduce heat to medium, and cook 5 minutes or until onion begins to brown. Stir in bacon, spinach, rosemary, beans, and tomatoes; remove from heat. -Arrange chicken pieces on top; bake, uncovered, at 350° for 40 minutes.

 

 This meal is filled with flavor and perfect for the cold weather months. I may try to make this in my crockpot next time. Do you have a favorite recipe you’d like to share?  I’m always looking for new recipes to try.

I was sort of desperate for something healthy to cook for my hubby for dinner (I will leave out the bacon, which makes me sad, but what's a girl to do when hubs is on a diet?). I have everything right here to make this. . .yay! thank you
