Easy marshmallow fudge recipe.
Growing up I always searched for ways to help my mother in the kitchen. I’d jump at the opportunity to help wash, peel or stir. I see the enthusiasm in Madi now, she’s always looking to help with whatever she can. I have wonderful memories of helping my mom and cherish the moments I now get to create with my own children. For me that kitchen is where most of my memories with my sisters and mother come from. It’s no secret that we helped her bake treats more often than actual dinner, because let’s face it rolling out dough and cracking eggs will indefinitely trump the excitement of cooking chicken.
Speaking of being in the kitchen have you watched The Food Network show The Kitchen? For as long as I can remember I’ve been a fan of Food Network shows. In college my husband, before we were married, used to say I spent more time watching cooking shows then actually cooking. I’m pretty sure it’s because I always waited for the end of the show when they would prepare the baked goods. Now that I was willing to try out. Lately I’ve been watching recorded episodes of The Kitchen when the kids are asleep and taking notes of recipes to try. I love the energy in the show featuring some of my favorites like Katie Lee, Jeff Mauro, and Sunny Anderson. They make you want to spend the afternoon cooking away right next to them. In addition to soaking up all their tips and ideas I spend a good amount of time eying all of the gorgeous kitchen appliances. Over the years my sisters and I found recipes that we each of us would enjoy making. They became “our recipes” in a sense that we individually were the ones to make it during the special occasion or holidays. This may be where my idea for having the kids take turns trying a new recipe on the weekends stemmed from. I loved having recipes that I made with my mother alone, it was a great way to bond with each us individually. From early on my favorite recipe was marshmallow fudge. I think I was 10 when I made my first batch and it quickly became one of my go-to for holiday gifts. It was during the holiday season on a weekend where we spent all day baking treats for family. I can still remember the mess we made, the burn I received on my arm from a baking sheet, and a cookie recipe fail that we still laugh at today. Since then we have tried a variety of fudge recipes, from the simplest mixing chocolate with sweetened condensed milk to making it completely from scratch.
This rocky road fudge recipe is one of the easiest you can make. It is a combination of sweetened condensed milk with semi-sweet chocolate. There’s a hint of vanilla extract, marshmallows in every bite, and chopped peanuts (or walnuts) layered in-between the chocolate. Granted I probably add too many marshmallows to the mix but you could never have enough in my opinion. :) Just a tip – I like to place my marshmallows in the freezer before I start making the fudge. The ten or so minutes they’re in there will help keep them cold enough not to melt in the hot chocolate.
Rocky Road Fudge
Ingredients
- 2 tablespoons butter plus 1 tablespoon divided.
- 1 14- ounce can sweetened condensed milk
- 2 cups semi-sweet chocolate chips
- 1 tsp vanilla
- 1 cup peanuts walnuts, or pecans
- 2-3 cups marshmallows
Instructions
- Place marshmallows in freezer for 10 minutes prior to making the fudge.
- Line 9x9 inch pan with foil and grease with 1 tablespoon butter.
- In a medium saucepan heat butter and sweetened condensed milk.
- Add chocolate and stir until melted.
- Remove from heat then add vanilla, stir well.
- Fold in cold marshmallows and peanuts. Pour into pan and refrigerate for 3-4 hours.

Just made this fudge and wish I would have put the marshmallows in the freezer, as your recipe recommended. I think the chocolate mixture was too hot – some of the marshmallows melted…sigh. Hope it will still be good. Setting up now. Thanks for sharing!!!!
