Grilled Avocado Bacon Turkey Sandwich

Avocado Turkey Sandwich

I’ll admit that I’m usually running around mid morning/early afternoon chasing the kids around and preparing lunches for them that I often bypass my own lunch. Sometimes I find myself eating whatever is left over from their plates or a quick snack during their nap time. It’s funny how that works out since I left the work field and became a stay at home mom. Back then I either packed a filling lunch or went out with co-workers for a sit down lunch. Oh, how things have changed!

I recently teamed up with Sargento to create a recipe using their sliced cheeses. We enjoy using Sargento cheese in our meals because they have a great variety of sliced and shredded cheeses including medium cheddar, provolone cheeses, swiss, and natural blends of cheddar-mozzarella cheese. The first thing that came to mind is my favorite at-home “gourmet” sandwich. I usually have a basic turkey, cheese, and baby spinach sandwich so this is my favorite lunch to enjoy when I get a chance to make it.

Now, I’m going to preface this recipe by mentioning that I don’t eat mayo, so you won’t see it listed. Oddly enough neither does my husband (or our children). We both stopped eating it in our early childhood, due to taste preference, and would rather not add it to our sandwiches. I’ve had several friends over the years comment that they can’t imagine a sandwich without it, but I think the avocado provides plenty of moisture to this sandwich. If you prefer mayo in your sandwiches go right ahead an add it in, but to me it’s not necessary.

Ingredients
  

  • 2 slices whole wheat bread
  • 1-2 slices oven roasted turkey
  • 1 slice Sargento Cheddar Cheese
  • 1 slice of bacon cooked and cut in half
  • 1/4 avocado
  • tomato slices
  • small pinch of salt and pepper

Instructions
 

  • Cook bacon according to directions or preferred textured.
  • Layer turkey, sliced cheese, bacon, and tomato slices on one slice of bread.
  • Mash 1/4 of an avocado to create a guacamole consistency. Spread on the second slice of bread.
  • Add a small pinch of salt and pepper to the avocado slice, press bread slices together.
  • Heat skillet to medium-high heat and grease with butter or cooking spray.
  • Grill turkey sandwich for about 1 minute on each side to help the cheese melt.
  • Cut in half and enjoy!

I have enjoyed this sandwich for years, it’s something I definitely need to make more often. Sometimes I substitute the Sargento cheddar cheese for pepper jack for added flavor and little bit of a spice, which is just as delicious! Avocado Bacon Turkey Sandwich
