I’m sure by now you’ve heard of the two ingredient pumpkin muffin recipe. In case you haven’t it’s a must-try recipe! The recipe involves mixing a box of spice cake mix and one 15-ounce can of LIBBY’S 100% Pure Pumpkin. Yes, that’s it! I’m not sure where the recipe came from but it’s been circulating around Facebook for years. When I first came across it on Facebook a friend mentioned she added a cup of chocolate chips to the batter, yum! They are the easiest pumpkin muffins you’ll ever make. They’re also a healthy version of the the standard pumpkin muffin recipe. The puree replaces the eggs and oil, cutting out extra fat and calories from the mix. We’ve continued to make these muffins over the years and eventually started using vanilla cake mix with some of our favorite spices and nuts. These raisin walnut pumpkin muffins are one of our favorites to have on hand for breakfast on the go or served with a cup of coffee. By switching to a vanilla cake mix I could adjust the spices to our liking and then added some healthy ingredients to the mix. I’m a big fan of using chia seeds in everyday foods and desserts. We toss chia seeds in salads, pancakes, and even muffin mix. In addition to the chia seeds I’ve added raisins and walnuts for a little bit of texture.
I’m sure you’re thinking I’m getting ahead of myself by making a pumpkin recipe long before fall has arrived. But I happen to think using pumpkin puree is great for a variety of recipes throughout the year. It’s a great source of Vitamin A and perfect for making protein smoothies and muffins with.
Pumpkin Muffins
Raisin-Nut Pumpkin Muffins
Ingredients
- 1 15- ounce can Libby’s 100% pure pumpkin
- 1 box vanilla cake mix
- 1 tablespoon chia seeds
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup raisins
- 1/4 cup walnuts
Instructions
- Preheat oven to 350 degrees. Line muffin pan with 12 liners.
- In a large bowl mix pumpkin puree, cake mix, chia seeds, cinnamon, nutmeg, and cloves until well combined. Stir in raisins and walnuts.
- Use a cookie scoop to evenly distribute batter into muffin pan.
- Bake for 20-22 minutes.
