Pan Roasted Chicken Recipe As a busy stay/work at-home mom I spend my days chasing far too active kids around, working on household chores, running errands and let’s not forget blogging. Sometimes I get carried away with a number of those things, whether it’s editing pictures or making sure the kids are staying busy, that I tend to forget the time. I can’t even tell you how often 5pm rolls around and I have no clue what’s for dinner. Tell me I’m not alone here. As much as I wish I kept a weekly menu going I can’t seem to stay that organized every week. For that reason I keep some of the basics on hand at all times and rely on quick and easy dinner recipes that are garaunteed to have dinner on the table in 30-45 minutes. This pan roasted lemon herb chicken recipe is one of are favorite go-to dinners when I’m short on time.

Years ago when my husband and I were looking for the perfect house to buy we briefly lived with his parents. We were young and still accustomed to home cooked meals from our parents. It’s then that I picked up on recipes that my mother and father-in-law routinely made. Some of those meals have now become our favorite dinners to make. One meal that regularly made an appearance is roasted chicken. Over the years I have become to love how easy this meal is to make and how great it is for leftover recipes. I often change the ingredients up but the most basic pan roasted chicken we make is with a lemon zest and herb rub that is cooked in an oven-safe skillet for a few minutes then transferred the oven for another 20. In about 30 minutes we have a quick dinner that the whole family enjoys.

I use olive oil in most of my chicken recipes. I love the flavor, especially this new Star Butter Flavored olive oil which is only available at Walmart. The best part is the it’s great for baking with…and you know how much I love baking. I also found this large pack of chicken thighs for a steal at Costco. They’re spereated in packages with 2-3 thighs inside. This is perfect for our family and doesn’t require repacking the chicken into freezer bags.

Pan-Roasted Lemon and Thyme Chicken

Ingredients

  1. 1/2 teaspoon kosher salt
  2. 1/2 teaspoon pepper
  3. 1/4 garlic salt or powder
  4. 1 teaspoon thyme, chopped
  5. 1/4 teaspoon dried oregano
  6. 1 tablespoon lemon zest
  7. 2 tablespoon olive oil
  8. 1 lemon, sliced
  9. 6 skin-on, bone-in chicken thighs

Instructions

  1. Preheat oven to 475.
  2. In a large oven-safe skillet heat 1 tablespoon of olive oil.
  3. Combine kosher salt, pepper, garlic salt, thyme, oregano and lemon zest with remaining tablespoon of olive oil. Rub onto chicken thighs.
  4. Cook chicken skin side down for 4-6 minutes or until light golden brown.
  5. Flip chicken over and add sliced lemon to pan. Roast in oven for 15-20 minutes.

Hey friends! How’s the weather where you’re at? It’s going to be 90 today! I have to admit it’s been hard getting things done at home. The kids can’t seem to get enough of walking to the park lately. I can’t blame them but geez walking in the heat yesterday made me want to jump in the lake and swim the afternoon away. It’s hard to remember it’s only Spring with temps like this. Speaking of Spring…berry season is starting, which happens to be my favorite! I’m sure I’ve mentioned it before that we live in a large agricultural area where most fruits and vegetable are easily attainable. Along with farmers markets, many farmers have their own fruit & vegetable stand on their land where you can purchase produce for a fraction of what they cost at a grocery store. It may get hot and sticky with average highs well over 100 during the Summer around here, but I wouldn’t give up access to this kind of produce for anything!

Strawberry growers are already setting up stands and soon blueberries, blackberries, and boysenberries will follow. I’m going through a little bit of a blueberry obsession lately. It started off with trying the blueberry yogurt muffin at Starbucks a few weeks ago. Have you tried them? Mmmmm  …they’re my new favorite! I try to keep blueberries in the house regularly for oatmeal and snacks but lately I can’t seem to stop baking with them. This blueberry coffee cake with a streusel topping has also become a regular in the house. Over the weekend I woke up a few hours before the kids, made a cup a coffee, picked up my Kindle and enjoyed a slice of cake all to myself. It was pure bliss!

This coffee cake is filled with a sweet and tangy blueberry filling then topped with a crunchy walnut and pecan crumb topping. To make it even sweeter there’s a vanilla glaze drizzled on top. It’s perfect for brunch parties or weekend guests to enjoy a cup of coffee with.

Blueberry Streusel Coffee Cake

Ingredients

  1. Filling:
  2. 2 cups blueberries
  3. 1 cup water
  4. 2 tbsp lemon juice
  5. 1 1/4 cups sugar
  6. 1/3 cup cornstarch
  7. Cake:
  8. 3 cups flour
  9. 1 cup sugar
  10. 1 tsp baking powder
  11. 1 tsp baking soda
  12. 1 cup cold butter, cubed
  13. 2 eggs, lightly beaten
  14. 1 cup sour cream
  15. 1 tsp vanilla extract
  16. Crumb topping:
  17. 1/2 cup flour
  18. 1/2 cup sugar
  19. 1/4 cup butter, softened
  20. 1/4 cup pecans, chopped
  21. 1/4 cup walnuts, chopped
  22. Vanilla Glaze:
  23. 1/2 cup confectioners sugar
  24. 2 tsp milk
  25. 1/2 tsp vanilla extract

Instructions

  1. In a large saucepan cook blueberries and water over medium heat for 5 minutes. Combine sugar and cornstarch in a small bowl. Add lemon juice, sugar and cornstarch to fruit; bring to a boil. Cook for 2 minutes or until thickened. Set aside to cool.
  2. In a large bowl combine flour, sugar, baking powder, and baking soda. Add butter until mixture becomes coarse crumbs. Stir in eggs, sour cream, and vanilla.
  3. Spread half the batter into a greased 13x9 inch pan. Add blueberry filling then remaining batter.
  4. Sprinkle topping over cake.
  5. Bake at 350 for 40-45 minutes. Combine confectioners sugar, milk, and vanilla extract in small bowl. Drizzle over warm cake.

My ultimate favorite dessert has to be double chocolate brownies. There’s something so sinfully comforting about brownies. They’re perfect for every occasion too; whether it’s for a party, school function, or to satisfy a weekend dessert craving. While I love a simple brownie recipe, I also enjoy a variety of brownie recipes with fillings and toppings. This triple chocolate mint brownie recipe was a recent request by my oldest who happens to like all things mint. He’s also the inspirition behind the Mint Ice Cream Cupcakes.

So the other day I had a conversation with the kids about our favorite desserts and we agreed to try new recipes on the weekends. We have an ongoing list of dessert recipes we want to try and endless books and magazines to draw inspiration from. We thought we’d make a fun game out of it by having the child who suggested the recipe make it with me then everyone gets to rate it. Of course this gives me an excuse to create a memory book (gotta get my paper crafting in somehow). Each child will take a picture with their dessert and we’ll slowly build a recipe/memory book out of it. I have to say I can’t wait to write down what my 2 1/2 year old has to say about the recipes. He has the best responses to the food and I know this will make a funny memory years down the road. :) I’ll try to have a monthly recap of our recipe adventures, with hopefully a lot of new favorite dessert recipes to share and the children’s critiques.

This brownie recipe is semi-homemade using Ghiradelli triple chocolate brownie mix. I buy this stuff in bulk at Costco. It’s our favorite brownie mix, especially with those chocolate chunks in the batter..mmmm. So not only do you get your chocolate fix with the brownie there’s also chocolate chunks inside the batter and a chocolate ganache topping.

Triple Chocolate Mint Brownies

Ingredients

  1. Brownies:
  2. Ghirardelli triple chocolate brownie mix
  3. 1 egg
  4. 1/3 vegetable oil
  5. 1/3 cup water
  6. Mint Creme Filling:
  7. 2 1/2 c. powdered sugar
  8. 3 tbsp unsalted butter, softened
  9. 3 tbsp whipping cream
  10. 3 oz cream cheese, softened
  11. 1/4 - 1/2 tsp mint extract
  12. 4-6 drops green food coloring
  13. Chocolate ganache topping:
  14. 1/3 c whipping cream
  15. 12 oz semi-sweet chocolate chips
  16. 1/3 cup unsalted butter

Instructions

  1. Preheat oven to 325; line 8x11 inch baking dish with parchment paper.
  2. Combine brownie mix, egg, water, and oil. Bake 40-45 mins, or according to package directions.
  3. Cool brownies.
  4. In a large bowl or stand mixer with the paddle attachment combine butter and cream cheese. Add whipping cream, mint extract, and food coloring.
  5. Slowly add powdered sugar until well combined.
  6. Spread over cooled brownies and refrigerate for 1 hour.
  7. In a small saucepan melt chocolate chips, whipping cream, and butter together. Pour over brownies, return to refrigerator for 1-2 hours or until chocolate has set.

Chocolate Chip Cookie Cheesecake Bars

Cheesecake has to rank among one of my favorite desserts. Cookies, however, will always be my all time favorite. There’s something comforting about the simplicity of a warm cookie that brings back memories of my childhood. I grew up baking cookies with my mother and grandmother and to this day it’s my favorite thing to do with my daughter. Recently I combined my two favorite desserts into a gluten free cookie dough cheesecake bar with mini Reese’s. Reese's Cheesecake Bars

I made a semi-homemade version of this recipe using the new Pillsbury gluten free cookie dough. The cookie dough was a mixture between a soft and crispy crust that complimented the cheesecake filling. The Reese’s were a necessary bonus, of course. A chocolate chip cookie crust, cheesecake filling, and Reese’s..sounds like the perfect combination to me! I have to admit I was pretty glad to see these cheesecake bars go quickly, I’m afraid I would’ve eaten them all if everyone else didn’t. I’m planning on making them again for a birthday party in a few weeks, I’m thinking of adding chocolate chips to the batter instead of Reese’s.

Pillsbury’s new gluten free cookie dough is great for creating desserts with or enjoying a delicious gluten free chocolate chip cookie. Over the last few months we’ve been incorporating more gluten-free meals into our diet and I’ve found that eating gluten-free is not as easy for someone who loves baking like I do. I’m still new to using gluten-free recipes but I’m always excited to try new gluten free products that can help  make things easier. I purchased the only container left at my store but I’m already looking forward to trying new gluten free desserts when I get a hold of more.

Chocolate Chip Cookie Cheesecake Bars

Ingredients

  1. 10 oz package cream cheese, room temperature
  2. 1 tsp sour cream
  3. 1/4 cup sugar
  4. 1 egg
  5. 1 tsp vanilla
  6. Pillsbury gluten free cookie dough
  7. 1 cup Mini Reese's

Instructions

  1. Preheat oven to 325; line 8x8 baking dish with parchment paper.
  2. Press cookie dough into baking dish, bake for 7 minutes. Remove from oven and allow to cool.
  3. Combine cream cheese, sour cream, and sugar in stand mixer.
  4. Add egg and vanilla; mix until well combined.
  5. Pour cheesecake filling on cookie dough, add mini Reese's on top.
  6. Bake for 25-30 minutes. Allow to cool completely before slicing.

A few nights ago my mother-in-law took all three kids kids out to dinner..by herself..bless her heart. Kidding, but I have to say that she’s pretty brave and I’m happy to hear it went smoothly. Leaving my husband home to figure out a quick meal for two I made a small plate of fried ravioli with marinara and a side of green beans. It was quick and perfect for the two of us. Fried Ravioli Recipe I used Buitoni spicy beef & sausage ravioli covered in a buttermilk italian bread crumb batter and fresh parmesan cheese. This recipe is easy and took maybe ten minutes start to finish. I have to say that I often rely on frozen food like this a lot when it’s the two of us. Some of the staples I usually keep on hand are Buitoni ravioli, lean pockets for my oldest (they’re his favorite after school snack!), healthy choice baked meals (for when I don’t have a chance to cook lunch), Marie calendar chicken pot pies, stouffer’s lasagna, Birdseye steam fresh vegetables, and Green giant frozen vegetables. ravioli recipe A common misconception is that frozen foods are unhealthy, but research suggests that frozen fruits and vegetables can be nutritionally equal to fresh produce. Since fruits and vegetables are picked at their peek ripeness they maintain their high nutritional value once frozen. A study conduced by the Frozen Food Foundation and University of Georgia studied the consumption of fruits and vegetables and their nutritional value. The study was based on fresh (on day of purchase), stored (up to five days at home), and frozen food. The resulted revealed that in many cases the nutritional value of frozen fruits and vegetablea is greater than fresh produce due to storage time, which results in a declination of nutritional value over time. The key for me is to balance our meals with nutritional foods and keeping an eye on sodium content. Fresh fruit is definitely a staple in our home. We buy endless amount of bags of frozen berries, peaches, and pineapples for protein smoothies. Using frozen fruit eliminates the use of ice and gives the smoothies texture. Another favorite are the Steamfresh frozen vegetables. These are so easy to throw together as a side dish when I’m running late on dinner.

Parmesan Fried Ravioli

Yield: 10

Ingredients

  1. olive oil for frying
  2. 1 cup buttermilk
  3. 1 cup Italian-style bread crumbs
  4. 1 package Buitoni ravioli
  5. 1 tsp Italian seasoning (optional)
  6. dash of salt and pepper
  7. fresh grated Parmesan

Instructions

  1. Fill frying pan with olive oil about to 2 inches deep. Heat oil over medium heat.
  2. Combine bread crumbs, seasoning, salt and pepper in medium bowl.
  3. In a separate bowl dip ravioli in buttermilk then dip into bread crumbs.
  4. Fry raviolis in batches for about 3 minutes or until golden brown.
  5. Drain ravioli on a paper towel.
  6. While still warm sprinkle fresh Parmesan cheese on top.

Dark Chocolate Peppermint Bark

Ingredients

  1. 2 cups dark chocolate
  2. 1 tsp vegetable shortening, melted
  3. 1 tsp peppermint extract
  4. 1 cup Andes peppermint pieces

Instructions

  1. Line baking sheet with parchment paper.
  2. Melt dark chocolate over double boiler. Once melted stir in shortening and peppermint extract.
  3. Pour a thin layer of chocolate onto prepared baking sheet. Use a spatula to spread chocolate evenly.
  4. Sprinkle peppermint pieces on top of melted chocolate.
  5. Refrigerate for 15 minutes; break into pieces and store in tightly closed container.

Since becoming a stay at home mom and working from home I’ve changed my meals quite a bit. Before I would rely on picking up something on my lunch break. Now I purposely plan meals that can be stored for future lunches. I like to create meals that can easily be frozen and warmed up individually. This helps keep me focused on my meal plan, without the temptation to grab something on the go.

Besides pizza my son absolutely loves lasagna. I don’t know what it is but it’s been one of his favorite foods since he was a toddler. He’s my pickiest eater, always has been, but I know when I’m making lasagna that he won’t have a single complaint about dinner. This boy could eat an entire pan if I’d let him. Considering he likes it so much I’m constantly trying to change things up. I have a few recipes i switch back and forth from and this lasagna roll ups recipe happens to be one of my favorites.

What I like about this recipe is the convenience. The roll ups are easy to wrap individually then pop in the microwave for lunch, especially on busy days running back and forth between schools. To make this meal easier I rely on the convenience and great taste of Barilla pasta and sauces. I picked up my Barilla lasagna noodles and traditional flavor pasta sauce at Safeway. Spicy Italian Sausage Lasagna Roll Ups

Ingredients

  1. 8 lasagna noodles
  2. 1 tsp salt
  3. 16 ounces spicy Italian sausage
  4. 1 small onion, chopped
  5. 1 garlic clove, minced
  6. 1 tsp olive oil
  7. 1 jar Barilla sauce
  8. 2 cups ricotta cheese
  9. 1 large egg, beaten
  10. 10 ounces frozen spinach, thawed and squeezed
  11. 1/2 cup grated Parmesan cheese
  12. 2 cups shredded mozzarella cheese, separated
  13. 1/2 tsp salt and pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Bring a pot of water to a boil. Add teaspoon of salt and cook lasagna noodles according to package directions. Drain and lay noodles down on baking sheet.
  3. Sauté minced garlic and onion in olive oil. Add spicy Italian sausage and cook thoroughly. Stir in sauce and heat until warm.
  4. In a medium bowl combine ricotta cheese, Parmesan cheese, 1 cup mozzarella cheese, egg, garlic, spinach, salt and pepper.
  5. Spray 9x13 baking dish with cooking spray and add a thin layer of sauce to the bottom.
  6. Spread ricotta cheese mixture evenly onto each lasagna noodle. Top with a layer of the Italian sausage sauce and sprinkle mozzarella cheese on top. Roll the noodles up and place into prepared pan. Top the lasagna noodles with the remaining sauce and sprinkle mozzarella cheese on top. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 5 minutes.
